Disclaimer: I am not a great measurerer (official term). Please don’t worry too much if you don’t follow the recipe below to the gram – I promise the next time I make it, I won’t be. The best thing about cooking with Pepper & Me products, is that even when you think you’ve ruined dinner, it’s still a party in your mouth. And no, Cherie doesn’t pay me to say that.
Ingredients:
- 4 x medium tomatoes
- 2 x large apples
- 1 x onion
- 1 tsp Pepper & Me Whatevz Mum
- 2 tbslp Pepper & Me Man Rub
- 2 tblsp apple cider vinegar
- 2 tbslp balsamic vinegar
- 3 tblsp honey (some may argue this is “sugar”)
Method:
- Dice tomatoes
- Peel, core and dice apples
- Peel and dice onion
- Add tomatoes, apples and onion to a pot with Pepper & Me Whatevz Mum (I didn’t grind mine for this recipe), Pepper & Me Man Rub, apple cider vinegar, balsamic vinegar and honey
- Cover and cook on low to medium heat for about 30 – 40 minutes (keep an eye on it though, don’t get sidetracked by Dr Phil and burn it to the bottom of the pot…)
- You can leave this is a chunky chutney style sauce, or give it a blitz with the hand blender for a saucier sauce
Hazel’s Hot Tip
Add all of the ingredients to the slow cooker with a nice slab of beef or pork for a (refined) sugar free slow cooked pulled meat – deeeee-lish!
